In the beautiful Oita Forest on Kyushu Island in Japan, shiitake growers have been cultivating organic shiitake the traditional way for over 100 years. Unlike most shiitake that's industrially grown on sawdust, Ohsawa Organic Donko Shiitake is grown slowly on old "Kunugi" oak logs in a protected forest that is recognized by the United Nations for its regenerative permaculture. The thick, closed cap shiitake are carefully handpicked and dried to retain precious, beneficial spores.

 

To Prepare:
Rehydrate for 30 minutes. Save the soak water and use in this or another dish. Trim stems and slice caps.
Equivalent to 8oz fresh mushrooms.

Umami Dashi Broth

  • 16 c. Water
  • 1 c . Ohsawa Organic Nama Shoyu
  • 1 oz. Ohsawa Organic Shiitake Mushrooms
  • 3 pcs Ohsawa Kombu Sea Vegetable
    Bring all ingredients to a boil. Reduce heat to low and simmer for several hours until liquid is reduced by half. Strain. (Save mushrooms and kombu for other use). Use broth for clear soup or noodles; dilute to taste. Store unused broth in refrigerator for up to 10 days.
