Ingredients (serves 4-6):
Peanut sauce
- ¼ cup creamy peanut butter
- 1 tbsp Ohsawa Nama Shoyu
- 1 tbsp rice vinegar
- ½ tbsp crushed ginger
- 1 garlic clove, grated
- Pinch of salt
Salad
- 7oz package Muso from Japan Soba Noodles
- 2 cups shredded cabbage mix
- 1/3 cup sliced green onion
- ¼ cup chopped cilantro
- ¼ cup chopped peanuts
- Sesame seeds, for garnish
Directions
- Prepare the soba noodles according to package directions, rinsing until cold. Before draining, reserve ¼ cup of the soba noodle water for the peanut sauce.
- While the noodles are cooking, whisk together all of the peanut sauce ingredients in a small bowl until combined. Add 2 tbsp of the reserved pasta water and whisk until smooth. Add a little more water if needed if the mixture is too thick. It should be a smooth, pourable consistency.
- In a large mixing bowl add the cooked and cooled soba noodles, cabbage mix, green onion, cilantro, and the peanut sauce. Toss until combined.
- Pour into your serving dish and garnish with the chopped peanuts and sesame seeds to serve.
