Sweet, savory and perfectly crunchy, this Maple Miso Snack Mix is an easy homemade treat with a delicious umami twist. Maple syrup adds just the right amount of sweetness while miso brings a rich, savory depth of flavor to every bite. Perfect for snacking, entertaining or packing up for an afternoon treat, this simple mix is sure to become a new favorite.
Ingredients (makes 2 large baking sheets. Halve the recipe for one baking sheets worth)
- 5 cups corn chex
- 5 cups rice chex
- 2 cups pretzel sticks
- 2 cups mixed nuts
- 2 cups crushed rice cakes
- 2 sticks unsalted butter
- ½ cup brown sugar
- 1/3 cup pure maple syrup
- 1 ½ tsp garlic powder
- ¼ cup Muso From Japan Light Sweet Miso
- 2 tbsp Ohsawa Tamari
- 1 tsp Ohsawa Roasted Sesame Oil
Directions:
- Preheat the oven to 250 degrees Fahrenheit and line 2 large baking sheets with parchment paper.
- In a large mixing bowl add the corn chex, rice chex, pretzels, mixed nuts, and rice cakes. Toss to combine.
- In a medium sized saucepan, melt the butter over medium heat. Whisk in the brown sugar, maple syrup, garlic powder, miso, tamari, and sesame oil. Whisk until bubbly and the sugars have dissolved and the mixture no longer separates.
- Pour over the top of the chex mixture and toss until evenly coated.
- Divide between the two baking sheets and spread evenly.
- Bake for about 1 hour, tossing the mixture every 15 minutes or so until golden brown. Some pieces will get darker due to the sugars, just watch closely to avoid burning.
- Remove from the oven and let cool completely. Serve and enjoy!
